Ingredients
7 Cup Whole Wheat Spaghetti (Cooked)
2 Cup Cabbage (Shredded)
1 Cup Carrots (Shredded)
1 Cup Mushrooms (Sliced)
1 Cup red onion (Sliced)
2 Stalks Celery (Sliced)
2 Bell Pepper (any color - Sliced)
4 Cloves garlic (minced)
2 Tbsp Soy Sauce
1 Tbsp White Vinegar
4 Tbsp Water (for sprinkle)
Cooking spray
Cooking spray
Salt and black pepper to taste
Instructions
- Spray pan with cooking spray and add onions and garlic. Sauté for about few seconds.
- Add all the vegetables, sprinkle with salt and sauté for 1 min.
- Add soy sauce and vinegar.
- Add noodles. Sprinkle with 4 tbsp water.
- Sprinkle fresh ground black pepper and mix well to coat.
- Serve hot or cold.
Note
Serve it with a side of Cauliflower, Zucchini, & Sweet Corn (0 pt). Can also add sauté extra firm tofu to this dish—3 oz tofu = 2pt
