Mix Vegetable Soup

Serves: 4 
Serving size: 1 Cup  
WW points: 1pt


Ingredients
1 Red Onion (Chopped)
2 Cloves Garlic (Minced)

1/2 inch Ginger (Fresh Chopped)
1/2 Cup Carrots (Chopped)
1 Cup Spinach (Chopped)
1/2 Cup Green Beans (Chopped)
1/4 Cup Peas
1 tsp Soy Sauce
1 tsp Lime Juice
Pepper and Salt to taste
3 Cloves
4 Cups Water
1 tsp Olive oil or Cooking Spray - for no additional pts


Instructions

  1. Heat a pot, add oil, cloves, garlic, ginger, and onion.
  2. When slightly aromatic, add all the vegetables and water.
  3. Cover and simmer for at least 20 minutes or until vegetables are soft to touch.
  4. Add lemon juice, soy sauce, pepper, and salt.
  5. Serve hot like this or puree in blender.
Note
Very filling high in fiber soup.
