CAULIFLOWER, ZUCCHINI, & SWEET CORN

Serves: 5
Serving size: 1 Cup

Ingredients

2 Medium Zucchini (Cut lengthwise)
2 1/2 Cups Cauliflower (Cut small)
3 Cloves Fresh Garlic (minced)
1/2 Cup Red Onion (sliced)
3 Tbs Sweet Corn Soup mix (Maggi)
1 Tsp Olive oil (Substitute: Cooking Spray)

Instructions

  1. Heat a skillet on high heat.
  2. Add olive oil, garlic, and onion.
  3. Once garlic and onions turns golden, add zucchini and cauliflower. Sauté for 3 minutes.
  4. In the meantime in a small bowl, mix the soup mix and water to form liquid.
  5. Add to the skillet. Mix it well.
  6. Turn off the flame. Cover the skillet and let it stand for 5 minutes.
  7. Serve hot.

  1. if i substitute zucchini with carrots n peas, would it affect taste n points too much?

  2. Substituting zucchini with 1 cup of carrots and peas will not affect the points or taste.
