Serving size: 1/2 cup

2 Cup Tapioca/sabootdana
4 Cup Water
3 Tbsp water (For sprinkle)
1/8 Cup Peanuts (Roasted without skin)
1/2 Cup Potatoes (Cubed)
1 Cup Spinach (Chopped)
1/2 Cup Carrots (Cubed)
1/4 Cup Peas
1 Thai Green Chili (minced)
1 Clove Garlic (minced)
1 tsp Cumin Seeds
1 tsp Lime Juice
1/4 Cup Fresh Cilantro
Salt to taste
1 tsp Olive Oil / Cooking Spray - for no additional pts
Preparation day before making 
  1. Wash tapioca/Sabootdana 2 - 3 times and soak in 4 cup water overnight.
  2. Next day drain and keep aside.
  1. Heat oil in the pan, add cumin seeds.
  2. After they sparkle, add garlic and green chillies.
  3. Add the potatoes and carrots, cook for about 5 minutes covered or until tender.
  4. Add peanuts, tapioca/ sabootdana, peas, and spinach. Sprinkle with water
  5. Sauté for about 5-6 minutes.
  6. Add salt to taste and lime juice. Garnish with Coriander. Serve hot on the side or a as a bed for your main dish.
